Instructions

  1. Prepare the Filling:
    • Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until softened and fragrant (about 3 minutes).
    • Add the sliced mushrooms, cooking until they release their water and turn golden (about 5–7 minutes).
    • Toss in the spinach and cook until wilted. Season with salt, pepper, and a pinch of nutmeg if desired.
    • Remove from heat and mix in the cream cheese and Parmesan until smooth and creamy. Set aside to cool slightly.
  2. Prepare the Pastry:
    • Preheat the oven to 200°C (400°F).
    • Roll out the puff pastry on a lightly floured surface. Cut it into 6 equal squares or rectangles.
  3. Assemble the Pastries:
    • Place a generous spoonful of the mushroom and spinach filling in the center of each pastry square.
    • Fold the pastry corners over the filling to create a pouch or seal the edges by pressing them with a fork.
    • Transfer the pastries to a baking sheet lined with parchment paper. Brush each with beaten egg for a golden finish.
  4. Bake and Serve:
    • Bake for 20–25 minutes or until the puff pastry is golden and crispy.
    • Let cool slightly before serving. Garnish with fresh parsley or sesame seeds if desired.
