Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine breadcrumbs and grated Parmesan cheese.
  3. Dip each eggplant slice into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
  4. Arrange the breaded eggplant slices on the prepared baking sheet in a single layer. Bake for 20 minutes, flipping halfway through, until golden and crispy.
  5. In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer with baked eggplant slices, a sprinkle of mozzarella cheese, and a bit more marinara sauce. Repeat layers until all ingredients are used, finishing with mozzarella on top.
  6. Bake the layered dish for 20 minutes, or until bubbly and golden on top.
  7. Let the dish cool for 5 minutes before serving. Garnish with fresh basil, if desired.
