Instructions

  1. Prepare the Filling:
    • Heat olive oil in a skillet over medium heat. Add diced onion and bell pepper, cooking until softened (about 3–4 minutes).
    • Add ground beef, breaking it up with a spatula. Cook until browned and no longer pink.
    • Stir in cumin, smoked paprika, garlic powder, chili powder, salt, and pepper. Cook for another 2 minutes. Remove from heat.
  2. Assemble the Quesadillas:
    • Lay a tortilla on a flat surface. Sprinkle a layer of shredded cheese on half of the tortilla. Add a portion of the beef mixture on top, followed by another light sprinkle of cheese. Fold the tortilla in half to cover the filling.
    • Repeat for the remaining tortillas.
  3. Cook the Quesadillas:
    • Heat a non-stick skillet over medium heat. Place a quesadilla in the skillet and cook for 2–3 minutes on each side, or until the tortilla is golden and the cheese has melted.
    • Transfer to a cutting board and let it rest for 1 minute before slicing into wedges.
  4. Serve:
    • Garnish with fresh cilantro if desired. Serve with salsa, guacamole, or Greek yogurt on the side.
