Instructions

  1. Preheat the oven to 180°C (350°F). Grease a medium-sized baking dish with olive oil.
  2. Prepare the filling: In a large bowl, combine spinach, feta cheese, beaten eggs, nutmeg, salt, and pepper. Mix well until evenly combined.
  3. Layer the phyllo: Place one sheet of phyllo dough in the baking dish, letting the edges hang over the sides. Brush with olive oil. Repeat until half of the phyllo sheets are layered, brushing each sheet with olive oil.
  4. Add the filling: Spread the spinach and feta mixture evenly over the phyllo layers.
  5. Top with phyllo: Layer the remaining phyllo sheets over the filling, brushing each with olive oil. Tuck the overhanging edges neatly into the dish.
  6. Bake: Place the pie in the oven and bake for 30–35 minutes or until the top is golden and crispy.
  7. Serve: Let the pie cool for 10 minutes before slicing. Optionally, sprinkle sesame seeds on top for extra crunch.
